“My island is what inspires my recipes, through its scents, colours, and flavours.
I carefully select the ingredients that go into each and every one of my products, in order to capture the distinctive taste and the authenticity of our unique island, Corsica. My team and I keep this spirit alive with our cultivation of organic fig trees on the plot of land called Campestra, which is 25 km away from Ajaccio.
I recently decided that I wanted our experience to be officially recognised. In 2009, my entire product range was certified under ISO 22000, thanks to the effort put in by my hard-working team. I strongly believe that the growing demand for quality is directly linked to the demand for food security.”
